Frozen whips are definitely something to try, and you can prepare them in virtually any flavor imaginable using an extract of your choice. For this example, let’s say you want some frozen chocolate whips!

 

Ingredients:

- Heavy whipping cream - 1 cup

- Cocoa powder - 3-4 tablespoons (depending on how intense you want the chocolate flavor to be)

- Keto-friendly sweetener of your choice - depends on the sweetener, so go for taste here

- Vanilla extract - 1/2 teaspoon

- Salt - 1 pinch

 

Directions:

1. Put all ingredients in a large bowl and beat them well until the cream has firm peaks.

 

2. Fill a piping bag with the chocolate whipped cream.

 

3. Take a baking sheet lined with parchment paper and swirl as many cream mounds as you can fit on the paper. Try forming them as soft-serve ice cream for a beautiful look.

 

4. Put the baking sheet into the freezer for at least one hour.

 

5. Enjoy! Or transfer to a plastic container for later. Each whip will pack around 8 g of fat and under 2 g of net carbs.

 

6. If you want some other flavor, just switch the cocoa powder for a natural extract of your choice.

- Chia seeds - 2 tablespoons

- Vanilla extract - 1/2 teaspoon

 

Directions:

1. Put everything in a suitable bowl or jar. Mix well.

 

2. Optional: add a bit of any zero-carb sweetener.

 

3. Place the bowl with the mix in the fridge for 4-5 hours (better overnight).

Ingredients:

- Heavy whipping cream - 1 cup

- Cream cheese - 8 ounces

- Strawberries - 4 berries

- Strawberry-flavored gelatin (sugar-free) - 30 ounces

- Boiling water - about 1/3 cup

 

Directions:

1. Chop your strawberries into medium-sized pieces.

 

2. Put the cream cheese in a bowl and beat until smooth.

 

3. Add the whipping cream to the cream cheese and beat until soft and fluffy.

 

4. Pour the gelatin into the cream and cheese mix, then add the chopped strawberries.

…and we’re back to ice cream, because is there any keto dessert that’s more suitable for the hot part of the year? Probably not. The good news is that this one is full of healthy fats from avocado!

 

Ingredients:

- Avocados - 2 fruits, peeled and pitted

- Cocoa powder - 1/2 cup

- Heavy cream - 3/4 cup

- Coconut milk - 3/4 cup (preferably from a can)

- Zero-carb sweetener - 1/2 cup (or to taste, sweetness varies from one sweetener to another)

 

Directions:

1. Put everything in a blender and blend on high power until smooth.

 

2. Check the taste, add more sweetener if needed.

 

3. Line a suitable food container with baking paper. Will the container with the chocolate mix.

 

4. Close the container and freezer for 4 to 6 hours.

 

5. If you leave it overnight, let your ice cream defrost for 15 to 20 minutes before serving.

Expanding on the keto-fabulous fat bombs that double as summer desserts, here’s a fabulous recipe of mint & chocolate chip ice fat bombs!

 

Ingredients:

- Avocado - 1 medium fruit, peeled and pitted

- Mascarpone (or creamed coconut milk) - 1 cup, full-fat

- Zero-carb sweetener - 1/4 cup (or to taste, sweetness varies from one sweetener to another)

- Peppermint extract - 1teaspoon (or 1 tablespoon of fresh mint)

- Dark chocolate - 2 ounces, finely chopped

 

Directions:

1. Put all ingredients besides the chocolate in a food blender and pulse until smooth.

 

2. Throw in the chocolate and mix well.

 

3. Distribute the mixture throughout silicone muffin molds, candy molds, or cake pop molds.

 

4. Freeze until set, usually about 2 to 3 hours.

 

9. Peanut Butter Keto Cookies

This super quick keto dessert is something halfway between a cookie and a candy. Because who said that all keto summer desserts should be ice-cold, huh?

 

Ingredients:

- Peanut butter - 1.5 cups, unsweetened, melted

- Coconut flour - 1 cup

- Zero-carb sweetener to taste (a sugar substitute like 1/4 cup of Swerve probably works best)

- Salt - 1 pinch

- Vanilla extract - 1 teaspoon

- Low-carb dark chocolate chips - 2 cups

- Coconut oil - 1 tablespoon

 

Directions:

1. Put the peanut butter, coconut flour, sweetener, vanilla extract, and salt in a suitable bowl. Mix well until smooth.

 

2. Line a baking sheet with parchment. Form the mixture into small balls, then flatten a bit for stability. Put them on the baking sheet.

 

3. Freeze for 1 hour or until firm.

 

4. Melt the chocolate and pour it into a medium bowl. Mix in the coconut oil.

 

5. Dip the peanut butter candies in the chocolate, then put them back on the baking sheet.

 

6. Freeze the cookies until the chocolate sets, usually about 10 to 20 minutes.

Longing for some form of Nutella that won’t mess up your ketosis this summer? Well, here’s one of our favorite options so far. You can use any kind of nuts for this recipe, but we recommend going for hazelnuts or cashew.

 

 

Ingredients:

- Nuts - 5 ounces (we recommend hazelnuts or cashew)

- Coconut oil - 1/4 cup

- Butter - 1 oz, unsalted

- Cocoa powder - 2 tablespoons

- Vanilla extract - 1 teaspoon

- Zero-carb sweetener - 1 teaspoon (or to taste)

 

 

Directions:

1. Preheat your oven to 350 F (180 C). Evenly spread the nuts on a baking sheet and roast until golden. On average, this takes 10 to 15 minutes but keep an eye on the process, since most nuts burn easily.

 

2. Let the nuts cool down.

 

3. Optional, if you’re using hazelnuts: put the nuts on a clean towel or cloth. Cover with another cloth (or with a fold of the first one), then rub the cloths to make part of the nut shells come off. The shells are edible, but not everyone likes them.

 

4. Put the roasted nuts, coconut oil, cocoa powder, and other ingredients in a blender. Blend until you reach your favorite consistency for a spread. For a smoother spread, blend longer!

 

5. Enjoy with keto-friendly bread or crackers!

 

 

12. Keto-friendly Berry Mousse

Need one more keto-friendly way to enjoy some berries this summer? Try this super easy recipe, with just 3 net carbs per serving!

 

 

Ingredients:

- Heavy whipping cream - 2 cups

- Fresh berries (blueberries, strawberries, and raspberries work best) - 3 ounces

- Pecans - 2 ounces

- Lemon zest - 1/2 fruit

- Vanilla extract - 1/4 teaspoon

 

 

Directions:

1. Whip the heavy cream until it starts forming soft peaks. Add the vanilla extract and the lemon zest, then whip a bit more to mix everything together.

 

2. Add the pecans and berries of your choice.

 

3. Put in a container with a lid, or just cover the bowl with plastic wrap. Refrigerate for at least 3 hours or until a firm mousse forms.

Extremely quick to make and with just 1.5 net carbs per bite, this dessert is almost guaranteed to become an instant favorite for any keto enthusiast out there.

 

 

Ingredients:

- Blanched almond flour - 1 1/4 cup

- Butter - 1/2 cup

- Vanilla extract - 1 teaspoon

- Blackstrap molasses - 1/4 teaspoon

- Zero-carb sweetener like erythritol - 1/3 cup

- Sea salt - 1 pinch

- Sugar-free chocolate chips - 1/4 cup

- Optional: collagen peptides for more nutritional value and health benefits - 1/2 cup

 

 

Directions:

1. Mix the butter and the sweetener in a suitable bowl. Beat until fluffy. Mix in the molasses and vanilla.

- Butter - 2 ounces

- Zero-carb sugar substitute like Swerve - 1/4 cup

- Peanut butter - 1/2 cup

- Vanilla extract - 1 teaspoon

- Sugar-free chocolate chips - 1/2 cup

 

 

Directions:

1. Mix everything besides the chocolate chips. Spread the mix in pan of your choice.

 

2. Melt the chocolate.

 

3. Spread the melted chocolate over the peanut butter mix.

 

4. Refrigerate until set, usually for at least 2 hours. For an even better flavor, let sit for about 4 hours!

- Cocoa powder - 4 tablespoons, unsweetened

- Zero-carb sweetener - to taste

- Vanilla extract - 2 teaspoons

 

 

Directions:

1. Mix all ingredients using a hand mixer until firm peaks start forming.

2. Refrigerate until barely frozen, about 60 minutes.
