Low Carb Breakfast Stax

You gotta love breakfast. Why? Check this recipe!

Ingredients:
  • 10 slices bacon
  • 2 tablespoons bacon grease*
  • 4 cups spinach
  • 4 large eggs
  • ½ cups cheddar cheese
  • 2 tablespoons heavy cream
  • ¼ teaspoon Mrs. Dash table blend
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • *Rendered from the 10 slices of bacon.
    How to prepare:
    1. Preheat your oven to 400F. Weave your 5×5 bacon weave. I’ve put together a picture tutorial on how to weave bacon. Put your bacon weave in the oven for 25 minutes.
    2. About 15 minutes after the bacon has been cooking, we’ll start getting the eggs ready. Crack 4 eggs into a container.
    3. Add your 2 Tbsp. heavy cream (half a tablespoon per egg) to your eggs.
    4. Scramble them well until the mixture is combined.
    5. Wait until your bacon weave is cooked. It should look pretty brown by the time you finish.
    6. Transfer your bacon weave to a paper towel so it can cool down and get rid of the excess grease to become crisp.
    7. Create a funnel in the piece of foil you used to cool the bacon. We’ll be using some of the bacon grease to cook the eggs and spinach.
    8. Pour about 2 Tbsp. of the bacon grease in a pan and set it to medium-high heat.
    9. Add your spinach to the bacon grease and stir. Let the spinach cook and then turn heat to medium-low. Add eggs and seasoning and do not touch them.
    10. Once the eggs have cooked on the bottom, you can mix your eggs. You don’t want them to be completely overcooked and rubbery, but rather a bit moist.
    11. Lay your eggs on top of the bacon weave you created. Try to get them as squared with the bacon weave as possible, leaving a slight overlay of the bacon at the bottom. Add the cheese on top once the eggs are properly set.
    12. Transfer the bacon weave to a piece of foil on a baking sheet. Set your oven to broil.
    13. Broil your bacon weave and eggs for about 3 minutes under the highest, or second highest broil setting.
    14. Once you’re finished, cut the bacon weave and egg into Breakfast stax!
    15. Serve and enjoy!
